Backside of Mt Spokane is a good place to start. Welcome to Panhandle Backcountry!
East of I-90, opposite Lookout Pass Ski area.
4th of July Pass is quick and easy too. Park on the south side of the freeway. You need a parking permit:

A trip up to Big Rock is fun to do, great views at the top too.
The Mica Peak access of Belmont Road (intersects Hwy 27 in the town of Mica, south of Spokane) gets you to the less crowded side of the area. Routes to the top and connecting with Liberty Lake Park trails can be found.
